Removing portal record

I have a table volunteer, interest and interestlist joined by ID's. On my volunteer table I have a portal of interest. My intereslist is my join table showing all interest of each volunteer. My question is say you are entering records in the volunteer table and enter an interest but then need to not show that interest or if you need to remove an interest for a volunteer how do you delete it but not delete the record in the interest table. My interest table is say a "static" table showing all the interest with their ID. I donot want records removed from this table. Also if you go to interestlist table and you have an entry of a volunteer that isn't showing an interest and I delete it it deletes the whole volunteer records.

 

I don't have delete related records in Define relationship edit box checked.
