Set Field Rules - Layout without the field

When using the set field script step, it seems that sometimes I am able to script this step when the field does not appear on a layout and sometimes it wont work unless the field is on the layout. Are their any rules about when the field has to be on the layout or not?

Set Field[] should work fine without the target field being on the layout. You might check that the layout you're on is not based on a parent TO or unrelated TO. Also, make sure the privilege set has Edit access to the field and the layout's fields, or that the "Run script with full access privileges" option is checked on the script.
